Last night I scored the meaty side of the pork belly in the opposite direction to the top and rubbed the marinade into it. Li left it in the ridge overnight .

Here is how I will cook it.

Two small spring loaded pie dishes or something tall enough to allow water in the pan without  touching the meat.
Then the rack  on top.

Then I changed my mind about the marinade on top so rubbed most of it off a and put it along  the sides

O

Now I put the pork on top of the rack in the pan with water 1/2  way up. I will put it into an oven at 220 c FF for  20 minutes before turning it down to 180 c for 30 minutes before turning it up to 230 c for 15 minutes. Let it rest for  10 minutes and cut it into the squares  you have actually made by the scoring.

I'll be back at lunch time to tell ya how it went with  another pic.

Thanks Hally :)

You never know, cp might change. I never used to like doing chores when I was younger either :-))
There is hope for him because he has such a wondful mum as a role model :-*

Dr Phil says that it is up to the parents to make the kids responsible.  . We were told to do stuff and we did it. Eventually we learned that  doing stuff around the house  was part of being a family. It also means kids are capable and independent. If your teenage kids do not know how to do a load of washing  and take out the rubbish then you have failed as a parent.

BUT my mum parented my brother and I the same way, and we have turned out completely different. Do you have an explanation for that Gertie? It still confuses me to this very day... ???

I would say your mother let him get away with it . Mothers are  often easier on boys for some reason. My son didn't come good until he got married  and found his wife  was a bit like me some shaped up quick smart. The  knowledge was there somitmdid not take long.

Oops. Or as food as usual but I think that was because the piece was not very fatty.

Some crispy crackling but nearly burnt it . Delicious anyway.
