We enjoyed our Slow cooker Hoisin chicken drumsticks so much that I have a larger batch on at the moment to freeze for DH and his sister whilst I am on the retreat.  I've also done a double batch of farfallina's pilaf rice to go with it and a Thai curry I still have to make.

I have taken the meat off the bone for the batch I am freezing and for this second lot, I also de-skinned the chicken legs.

Thats what I just dished up for dinner :D Its cold and raining here, perfect weather to have the oven on and the smell of roast chicken filling the house ;D

Sadly my best friend found out this week she has breast cancer, she is having a masectomy monday. I am fiiling her freezer. This was not happy cooking, but happines in the way I can help.

I found the same news shocking but once I was underway with the Chemo, Radiotherapy and now drug infusions I felt lucky when I looked around. At least with breast cancer it's more operable. My lumpectomy and reconstruction was not so startling as a mastectomy and in fact it seemed like free cosmetic surgery to me. Hopefully she can look forward to the reconstruction part which is amazing. Of course I can't speak for Australia as it is some years since I lived there but here in England the recovery rate is good. Of course you don't think that in the beginning but with a friend like you to care about her, she will be able to share her thoughts.  I also stocked up my freezer with meals before my op and I was so glad that I did as one can get rather tired with the medication.  Well done for thinking of such a happy way to help. What an angel you are!

As the freezer has defrosted overnight, I will wipe it out, set it going again and carefully restock, not overstock it again.

Today I will be cooking a beef curry - ginger crunch (DH's request) - date scones - fried rice and JD's hoisin chicken drumsticks for the freezer for while I'm away in WA.

Mich are you making the  hoisin sauce

i am trying very hard not 2 over stock my freezer, in the last few days i have only cooked for 2 and have made soup for 1. its a   challenge for me and a new way of cooking. last night DS come upstairs to say hi and frank asks him to set down and have some soup, i said sorry love only made eoungh for 2, frank and DS are still in shock  ;D
i don't need a recipe i'm italian

That's funny Uni, an Italian mother who hasn't cooked enough to give her son a bowl of soup.  ;D

I'm am going to make the hoisin sauce - I've never done it before.

Decadent Dot, thank you so much for your message. It was lovely to read & brought me much hope :) i dont know how to help, she wont speak to me, all our contact has been over the email, lots of it. She says she hopes to see me this week once she is home. I told her she could have her other boob done too & have 20yrd old perky numbers, she likes that idea. I am glad yiu think cooking meals is a good help. This week will be easier, cook each day & freeze not cook a load in one day :) she sent me this message "Can I move in and live with you, the food I have had so far is amazing. Dd polished off at least 3 slices of your delicious bread in one hit"
Her dd is a very picky eater.


I thoroughly recommend the empanadas.
