Arancini balls from left over risotto and stuffed zucchini.

Looks good DFM :D What are your zucchinis stuffed with?

I'm cooking myself some soup for lunch :) I'm also going to make my zucchini mini quiches later, but I'm going to use purple carrots instead of zucchini.... they should be interesting at least ;D

Spicy Chicken Noodles with Broccolini (QFITM) and some Green Tea Icecream (same book). Icecream calls for green tea powder which I can't get at the shops so I will grind some up in the TM. Has anyone made this ice cream?

The zucchinis are stuffed with lentils, rice, tomato's, the zucchini innards, garlic, rosemary leaves, spring onions with low fat cheese on top.
They are nice with lamb mince instead of lentils and add a bit of mint. I did lentils as DH and I try and have at least 3 vegetarian meals a week.

The purple carrot sounds interesting DFD.

Haven't made either of those recipes CP - will be interested to see how you go.

Made some healthy crio bro cupcakes today - modified from the healthy chef.  They are supposed to be sugar free as well but I thought they needed 2 tablespoons of sugar.

Honey Soy drumsticks in the slow cooker for the boys tonight and coconut chicken curry in the TMX for us.

I made a loaf of chookie/Hally no fuss bread and it was fantastic! Check it ou:

So proud! Next time I'll try with whole meal and/or seeds for something different. Think I'll have to invest in an electric knife though, because it was so light & soft made it a bit hard to slice.
Also made Amy's mini zucchini quiches.

Made some Kiss biscuits (butterfly shaped) with DS, DD and my Nephew, they enjoyed the decorating, especially my Nephew who licked the smarties before placing them on the biscuits :D

Maybe that was his plan :D
At 2.5 years old it was hard to try and control him. Made us laugh a few times though.
