Fantastic cupcakes Maddy.

Has anyone out there tried making a locquat jam?  My tree is laden with them and I thought they might be nice in a jam.  Haven't had a chance to google anything yet, but I figure asking you guys first will be the way to go :)

There are some nice recipes here for locquats Kerry, jam included and I'm sure you can convert to the TMX.

Madly, that looks like the Crabtree bakery signature swirl  🚙. Is that where you did the class? I really like their cookbook. Your cupcake looks just like the ones in their book!

it is the crabapple signature swirl  ;) but that pic isn't mine....just a web pic to show the swirl.  I too love that book, and the bacci cupcakes are my fave...but I found some of those recipes really didn't convert well in the TM...so I stick to the mixer for them.
No, they didn't run the class as they are no longer...a bit of bad press has followed.
Lush cupcakes do workshops within spotlight stores.
When she said it was "their" signature swirl, I thought  Hmmm...don't think so  :P

I have two lots on the go Uni.  One loaf I am doing Chookies way and the other I forgot what I was doing and mixed the whole loaf last night (got carried away).  Anyway, left it on the bench o'nite and it has risen up to the top of the bowl. So will put that one in the tin and leave to rise again.  The other one I have to finished mixing put in tin to rise.  Let me know how your fruit loaf goes.  I have plenty of starter left, thought I would make some pancakes or something.

If you have a waffle machine,  they make beautiful light waffles.  I have posted a recipe.

Yes I do have a waffle machine, (my Mums) could not bear to throw it out.  Will check out your recipe Chookie.  Thank you so much

Some more bread. That is about all as I have been out all morning. Dinner is a leg of lamb. At least I have some mint for the sauce. I got some about 4 months ago and wanted to put it in a pot. DH said no, put it under the olive tree, it won't escape from there  :-\ We now have mint coming up all over the lawn. At least it smells nice when he mows. :D
