Although very sunny here today it's really cold, so I made VHJ Thai Sweet Potato and Lentil soup for my lunch.I'm addicted to that soup :D

My friend is coming around to see what the TM could do for her. Her DS10 has Aspergers and will only eat certain foods. We are going to try making chicken nuggets in a variety of ways. I'm also going to make some crackers with added barley green and a dip. Bread and butter to show her the basics and see if she is interested in a demo.

I had a heap of tomatoes that needed to be used and I wasn't getting through them so I put them in the TM with half a cup of water.
All I did was cut them in half and remove the end.

Varoma setting for 20 min on speed 1. I wizzed it for 20 sec on speed 5 and it made a lovely puree that I've bagged up and put in the freezer.  No added sugar or salt just pure tomatoes.

I'm also making the vege stock concentrate for the first time.  Can't believe I've had my TM for a year and hadn't made it.  :o

Soon I'm going to make a white chocolate and berry friand recipe.

2 loaves of our regular bread. One experimental loaf of pumpkin bread, yet to be tried ( it is cooling) jam and ketchup is on the cards along with a batch of ice-cream.

Meagan,  I'm really keen to hear how your pumpkin bread went. It sounds delicious and I have 1/2 a butternut in the fridge ready to be used.

Sue here it is :) I did use Japanese pumpkin but I am sure butternut would be fine too.

I've made Farfallina's creamy zucchini sauce and served over thin spaghetti for lunch - yum!
Made 2 different batches of sponge mixture, 1/2 of each batch in gem irons and the other in a slab. Going to make lamingtons and jelly cakes for the freezer for Australia Day - both lots of the cake will be suitable but I thought I'd see which one is best. More later on that decision. I have just taken out of the oven Chookies garlicky bread - made half of the mixture into a plait and the other half pressed into a rectangular shape, sprinkled it with crumbled feta & sundried tomatoes and rolled it up.  Review later.

Well I haven't done a lot in the TM today, although I did make sushi rice in it and was very impressed with the result.

My challenge today was to see what meals I could get out of a whole chicken.  ($7.50)
I cut the chicken up and marinated the wings legs and thighs for another meal.  (meal 1)
As for the breasts and tenderloins, I cut them into strips and crumbed half in panko crumbs and used it with sweet chilli sauce to fill the sushi, this made todays lunch with enough left over for 2 children's lunch tomorrow. (meal 2 + left overs)
The other chicken breast will be poached tomorrow night for Vietnamese rolls for the kids school lunch.  (meal 3)
Oh and the chicken carcass went into my cast iron pot allow with a heap of veggies to make a Chicken and Veggie Soup.  (meal 4 + left overs)

Well done. It is amazing what we can do if we really set our mind to it. You should be congratulated on that.
