Also - do I just throw the whey away, or can it be used in something else?

Thank you judydawn - I always shake my head at people who ask questions without even looking for an answer - & then I go and do it  :-))
Now that I have read all about whey - I am not sure that the product that I have is actually whey...

Hi Spanner,

I make ricotta cheese from whey, what is left from soft cheese/paneer/kind of mozzarella (used fresh milk and lemon juice)
Just warm the whey to 50 °C and pour through a  muslin:
