This is the best tapioca pudding I have ever had - I have made it a few times now. Wonderful TM recipes on this site.

I've moved Intrepidtrier's recipe here too as so many of us have made it.

1/2 cup tapioca
3 cups whole milk
1/4 tsp salt
2 eggs
1/2 cup sugar
1/2 tsp vanilla

What I do is heat the milk to nearly boiling and then add the tapioca and salt to the bowl and let it sit for about an hour stirring every so often to stop the tapioca sticking together. Then simmer for about 5 minutes on reverse speed, add the sugar and then keep cooking until the tapioca is soft, beat the eggs and add some of the tapioca to them and then put back into the bowl and cook for about another 2 - 4 minutes until the egg is cooked and the tapioca is thick.

I made this last night and we really enjoyed it. I cooked the tapioca at 1000 for about 8 minutes. It seemed to cook quickly after the soaking. After adding the egg I cooked it for the 4 minutes.  After it was in it's serving bowl I just grated a bit of nutmeg over it. I love nutmeg over those sorts of things.
Oops, I see in the photo I forgot to brush the nutmeg off the bowl. :'( :'( No more close ups.

Don't worry about it ChookieCookie, looks great.  I loved this recipe but must admit I hated it when Mum used to make it when we were kids - bet she didn't put an egg in it :-))

I buy Sago flour at my local middle eastern store.  If you can find a similar store in your area, look for the product there.

It is not "halal" if sulfites are added and can't be consumed by Muslims because of religious restrictions. 

There are many products that I get from this source because  genetically modified plant products are also not halal, or at least not yet.

Cathy79 - I spoke to the health food shop in Grand Central ages ago (which also doesn't stock preservative free sago/tapioca).  The told me they could order it in though.
