Jan, I have had some for 2 years, not in he freezer or fridge. Seems to be fine.

Finally got this made and thanks to a lovely forum member (thanks Chookie) have got it perfect for our taste. I followed the recipe but think my lemon was too big & the paste set like rubber. So after some discussion with Chookie it was back in the TMX with another cup of water & the end result is great. This has a lovely intense flavour & I can't wait to have friends over to try it out with them and to also make some jam drop biscuits.

I know this is an old topic, but thought I'd put my 2c in
I made plum paste in the TM for the first time this year just following my nose. I used:
-1kg organic blood plums, halved (skins on)
-400g raw sugar
*puree all (speed 7ish)
*Varoma, speed 2 for 120mins
I poured/scraped it into jars and it has set like a champion. I probably could have cooked it for a shorter time in retrospect, but the OMG the flavour is intense as you can imagine. The plums were quite ripe too, and it still set

How do you get the paste out of jars greenie? Isn't paste supposed to be thick enough to cut and serve on a cheese board?

I wanted to make another 'paste' before christmas as I've had lots of good feedback on the
Apple and Raspberry Paste
I made a few weeks ago. When I saw a case of plums on sale today I knew I had to give Plum Paste a try.
I followed Chookie's recipe exactly. The bit I tried when I was pouring it into containers was very tasty so can't wait to try it with a bit of cheese once it is set properly.
The only feedback I have is not to wait too long before you pour it from the Thermomix into a container. I poured it into individual containers and by the time I got to the third one it was getting quite difficult to get a clean pour - the fourth container is made up of bits and pieces I either poured or scraped from the TMX bowl.
I'll report back once it is 'set' and ready to eat. Can't wait....

We have just had some plum paste that I made 2 years ago. It eas set in small plastic containers. Although it was firmer than when it was first made, it was perfectly acceptable. No one noticed the difference except me.

Chookie, I've been sneaking bits out of my 'odds and ends' container whilst it's been cooling and it is delicious. It is quite thick already so am interested to see how much more it sets. I have plenty more plums so I think I will make another batch but maybe next time I will cook it for slightly less time.

Made some more of this today but this time I cooked it for 1hr 7 minutes and only left it for a couple of minutes before pouring into little containers. Seems to have worked out well again.
