I saw it in there CP and really want to make it, but SD hates grated carrot with a passion so that rules out any carrot cake :-))

If you mulch it up well you can't see the carrot at all, Amy.
I'd use a good big spoon of spices and call it a spice cake and no-one need be any the wiser.  ;)

I saw it in there CP and really want to make it, but SD hates grated carrot with a passion so that rules out any carrot cake :-))

Yum! Made it last night and it is so easy and tasty.

I used almonds and then added some walnuts at the end for some crunch.

Had no maple syrup so used 60gm light agave syrup in the icing, yummy and not too sweet.

I am going to make a few batches into cupcakes for my sons 4th birthday party next week as he has requested a "veggie patch" cake and theme party!

No, not generous Amy, just enjoy cooking. Had never made cakes or biscuits before thermy so finding it good fun and then CP's book, such great recipes. :) :) :) :) :) :) :) :) :) :) :)

*Gratuitous food photography tip - don't use a flash when photographing food. Use as much natural light as possible and use the "Food" setting on your point & shoot.  You'll be happier with the results.

I didn't photograph anything until Jeninwa at the Gracetown retreat showed me how to photograph and post on my phone, easy, not as good as my camera but fast.
