Orange Couscous with Apricots, Sultanas & Yoghurt
Converted from
www.thebiggestloser.com.au
Ingredients
1 vanilla bean
1 cup low fat plain yoghurt (no sugar)
1 orange
4 ice cubes
100ml water
2 apricots or another stone fruit, quartered
2 tablespoons sultanas
95g couscous
extra orange segments for serving (if desired)
Method
Using a sharp knife, scrape the seeds out of the vanilla bean and mix into the yoghurt. Set bean aside.
Place peeled orange and ice into TMX bowl and blend on
speed 9
for
30 seconds
Add water, apricots, sultana’s and vanilla bean to bowl and cook for
3 minutes
at
80
o
on
reverse + soft speed
Stir in the couscous on
reverse + soft speed.
Leave lid on and let stand for a few minutes until the couscous has absorbed all the liquid.
Divide the warm couscous between two bowls then top with extra orange segments and yoghurt.
Have made this with tinned fruit and it works just as well. Love it with Peaches too

Thanks faffa_70 - great idea. Like the ice cubes to help break up the orange too.

Made this for breakfast this morning. Only had sweetened yogurt but very refreshing. I added a little extra boiling water when I removed it from the bowl and it fluffed up nicely.

Oooh, this sounds lovely. Can you please clarify...do you take the orange and ice mixture out before cooking sultanas, apricot and couscous? Thanks.

I read the recipe as leaving the orange and ice mixture in the TM bowl Hockey Mum.As Thermomixer says the ice breaks down the orange.

Thanks Cornish Cream...it sounded like that to me too but then at the end it says top with the orange segments so thought maybe you need take oranges out. Will have to try and see enroute what feels right. Thanks!

I presume the extra orange segments are just for decoration.

The orange segments are blended on speed 9 for 30 seconds so they would be mushed up. I think perhaps you can use some extra orange segments for decoration.
