sorry for not posting the recipe directly but as it was a trial run and not exactly a recipe but a first attempt conversion i wanted to get feedback from others before posting..i do apologise if i broke any rules
would love to hear any feedback on anyone else who made it (faffa-70, achookwoman, thermomixer??) and how you altered it and if it turned out good as well..i thoroughly enjoyed my corn relish dip on the weekend although hubby and friends werent so keen on it..no worries just means more for me..just love it yummmy!!
and JD yes it made alot but it keeps in the cupboard like chutney once sealed in hot jars and cooled, until opened obviously then itz off to the fridge where it lives a very short life hihi!

No need to apologise Frozzie, that's what we have moderators for. Once I read that you were happy with your conversion I thought it best go into the chutney section - makes it so much easier to find that way.

Well fozzie, made the corn relish today. OOPS, didn't read the bit about soaking for 2 hours. However the end result was very good, other than being a bit too vinegary, as you said. When I make it again I will use 3/4 of the vinegar. I added some honey but it didn't quite cut the vinegar. I don't think you need to soak the mix if you use tinned corn. I also used roasted capsicum and it didnt break up while mixing/cooking. I think this is an excellent First conversion, congratulations.

thanks for the feedback achookwoman..yes was a bit vinegary at first but i found with the agave syrup (dont know if you have it down under but its a cactus sugar syrup like honey consistency but also very sweet) added it was perfect and totally took away that vinegary taste.. would love to hear if anyone else trys it but with cutting down the vinegar..maybe someone could adjust the recipe to less vinegar for future use?
i think the soaking just draws some of the moisture out as the corn wasnt as pulpy? probably helps it make it more syrupy and less liquid?
and will definately need to add a quick burst or two or mix on three for a fex seconds at the end just to break it up a bit and not have so many whole bits..i found it seemed and tasted better that way.
thanks again ACW but luckily it was such a simple conversion for my first effort...have been wanting to try my mums sweet lamb curry to convert but havent had the confidence to try it

frozzie just look under the main meals here and/or in your book and see if you can see a lamb curry or similar dish to help you convert. maybe you could just give yourself some little suggestions or even write the menu out first in full as you think you should make it, so that you can change it and make adjustments as you you go and make notes. that may be less stressful than trying to convert directly from the recipe.

thanks ACW will do as soon as i get my hands on some lamb ie the next time i get motivated to go shopping with my two little munchkins who are on forever long european summer break..bring back school! lol
oooooh have to also try and make my nans tomato chutney...yumm!
and creampuff thanks for the advice..you think i would have thought of that myself seeing as though its the most obvious thing to do..break it down and rewrite the recipes in thx steps...feeling more confident to tackle my favs already!!

Frozzie, used some of the corn relish to make a dip. Equal amounts of corn relish and low fat Philly cheese. Mixed in TMX speed 4 for 5 seconds. Yummo.

ACW is there a different taste or consistency using philly cheese???...i use creme fraiche or sour cream usually?? might try the philly cheese to see...yum yum..
oooo might have to go whip up some dip..so so looooooooooove corn relish dip..find it funny though that the french dont really like it lol...will try it out on some more guests we have tomorrow...haha should write up a blog..'testing my food on the french' lol
