Frozen Yogurt

Hi all!

I'm trying to build my desserts blog having in mind the calories intake.. so I'm trying to keep the recipes lights.

I come across with frozen yogurt a lot as a substitute for ice cream with less calories and still tasty.

The thing is.. here in Portugal we don't have nothing with that term.. is there any recipe for this? Or a way to be done? Preferably on the thermomix?

Don't tell me you just buy yogurts and freeze them ;)

Pedro, here are a couple of untried recipes that was in the recipe book with my new ice cream maker that I will be trying in the near future.  I just need to make more yoghurt first.  If you don't have an ice cream machine to churn it for you, then follow the way you would do ice cream normally.  I can't wait to try them.  ;D

RASPBERRY FROZEN YOGHURT
480g raspberries, fresh or frozen and thawed
1 cup caster sugar  (US cup)
4 tblsp fresh lime juice
700ml fat free vanilla yoghurt

Place raspberries, sugar and lime juice in a bowl.  Stir to combine.  Cover and allow to macerate for 2-3 hours in the fridge.
Pour into TM bowl and puree on speed 8 until smooth.
Strain through a sieve to remove the seeds.
Mix the puree with the yoghurt until combined, then pour into ice cream maker and churn.

QUICK PEACH FROZEN YOGHURT
420g can peaches packed in juice
700ml low fat vanilla yoghurt
1/3 cup sugar (US cup)

Drain peaches reserving 120ml of the juice.
Place peaches in TM bowl and turbo once or twice to chop.
Add the yoghurt, sugar and reserved juice. 
Process until smooth and the sugar is dissolved.
Pour into ice cream maker and churn.

I will try them!! I guess the base for variations of this recipe would be the vanilla yogurt right?
I'll have to find my favorite one before starting creating.

Yes that's right Pedro.  I will be making natural yoghurt and adding vanilla. It just gives you an idea of where to start.  :)

I just freeze plain yoghurt in ice cube trays, and freeze fruit cut into chunks, then blitz them in the TM as if making a sorbet. It comes out like soft serve ice cream, and is really refreshing. You could add sugar if the fruit was tart. I make my own yoghurt in the TM with low fat milk, and it's particularly economical to freeze the occasional batch that doesn't thicken properly.
I also make ice cream by using frozen fruit and milk frozen in ice cube trays.
Beauty is only fur deep.....

So there you go sue_purrb, something to do with all our unsuccessful attempts at yoghurt making  :D :D  Thanks for that, I might now have to have another go at yoghurt making because of this.

Yes, like others I just freeze up yoghurt and milk in ice cube trays and blend in the TMX.  You can add liquid glucose to make it less firm, but fruit does the same.

Really, you just freeze them?

I've tried doin that once, it's true it gets more creamier after running a while on the thermomix but I do get the felling of too much... I don't know how to explain but I guess the best word would be ''ice crystals'' or ice grains, whatever you want to call it... and that's not the texture I'm looking for...

I had for the first time in a Dadone shop in Madrid airport a frozen yogurt that basically tasted like creamy natural yogurt but had the ice cream texture. I feel in love !!! Plus the toppings are infinite.. And to think it probably has much less calories than regular ice creams.. it's a win win

I HAVEEEE to discover a way to that in the TM. It will make my summers much happier :D

You may find that the commercial varieties have gums like guar or xanthum in them.
