achookwoman i think what tam is saying is she need to make the bread  so hubby can take it to work for his lunch.

yes after the 1st rise, covered with glad wrap, any where in the fridge will do

i am making 90 little rolls tomorrow  :D
But you must bring them back to room temp before you can cook them.
They only take 2 hours to make from the time you put the flour in the TMX bowl, until they are cooked.  If you start at 10.00am they are ready for lunch. At 12.00. During this time you only spend about 10 mins. Attending to the rolls.
If you use the cold oven start they are even quicker.  Less than 1 1/2 hours.
You could also under cook them and then stick them in a hot oven for 10 mins.  This is what I do, In fact I am doing it for lunch tomorrow.
Thanks again ladies!!!!!  I like the idea of par baking - can you please tell me how long to do the 1st cook??? I'm presuming it's about 2/3rds of the total cooking time????

Tam,  rolls about 15 mins, not brown,  bread sticks 20 mins.  again not brown.  Put into hot oven to reheat. 200 to 220o C for 10 mins.  Depends on size of rolls,  I usually make 8 from a mix. When the shown Bread Sticks are re heated,  they will be crisp and brown.  I usually spray with water before I put the in the oven to re heat.  I am very fussy about the end result     .Second photo of same bread sticks reheated the next day for lunch.

i made garlic butter scrolls using this recipe for lunch..was nice just need to tweek the garlic butter...needed more salt and maybe some chilli or something ..and think next time ill let them rise slightly a second time once rolled and cut  ;D

Thanks again ladies.  Well my first attempt at bread in the TMX wasn't a total disaster........I halved the amount after the 1st rise, stuck half in the fridge wrapped in baking paper and a towel (that was one of my mistakes as I have just gone to get it out of the fridge and there's a crust!!!!!!!!! Have managed to get to the middle of the dough to get 4 mini rolls for hubby's lunch today - that's if they rise :()
With the other half I made rosemary, oil, garlic and sea salt scrolls - they looked lovely going into the oven but I didn't have them all together on the tray and they cooked in about 12mins (I had set the timer to 15min and thought I'd check them). Anyway, my little girls still thought they were wonderful - even though they were rather crispy!!!!! ;D
I Have learnt a few lessons in breadmaking. :)

Tam,  we all learn by our mistakes.  My chooks love mistakes ;D ;D ;D ;D

Cover dough in or out of the fridge with plastic.  I use a cheap shower cap over a bowl as you can see through it. Spray with plenty of water.

Kids love home made bread.

With 20 pages of glowing recommendations I've decided this must the first bread I try in the TMX.  I've used Laucke's wholewheat flour as that's all I had in the pantry so hopefully it should turn out alright @ ;)

The dough is proving in the oven as we speak!  I'll report back once the rolls are done - although I think I will do breadsticks for dinner tonight.

Should be fine with Laucke Wholemeal flour.  Their Sourdough Rye is also good.  let us know how they go.
