Made these today Chookie with 150g wholemeal grains that I milled in the thermie - perfect. Had one warm from the oven - delicious!! I feel so proud of myself that I can make rolls for my family

Chickie, this is great. what I do for a bit of healthy variety, is bring to the boil some grain in a saucepan, let it sit in the water until cold, strain it. Freeze in 100g lots. When I want to make a loaf, I remove it from the freezer and pour boiling water over it so it is not too cold, and the add it to the flour, substituting it for a 100g of flour. You have to adjust the water you add so it isn't too wet. LSA is also nice added.
Keep experimenting now you have had some success.

I'll have to give the healthy version a go - thanks for the tips chookie! I've made 4 batches so far as the boys just keep coming up and taking them off the cooling racks and eating them plain - they love them

ACW in the last few day i have been using only a 1/4 teaspoon of yeast and i am extra happy with the results i am getting
i want to try using less than 1/4 teaspoon of yeast do u think it would be ok
the one i have made 2 day took 7 hours for the 1st rise, and 2 hours the 2nd rise

Uni, this method is commonly used. I have not seen it used with less than this amount.

Uni , There is a recipe that I posted, Rustic Bread from the Agrarian Kitchen, which uses 1/8 teaspoon of yeast. This is quite different to what you are making as it is a large loaf and has Rye and Wholemeal in it. It has a very fine crumb. I love this bread.

Have a look at these beauties Chookie - I gave the healthier version a go. I also milled 200g of rye and replaced some of the flour with it. They are very nice - I like a really grainy roll. Better go and make another batch of wholemeal ones for the boys - they're half way through the one I made last night
