That's why we stopped buying it Chookie - I'm going to do marylands next time with the skin removed and maybe double coating them. Will certainly do what VHJ suggested and cook them on a rack.

This recipe has me intrigued but does it work better with boneless chicken pieces or with chicken with bones?I've never eaten KFC so I am in the dark

I used skinless breast strips and they were moist, JD and CC. Bones in OK but I can do without the skin although this is what the original has. Double dipping might make it too thick, but worth a try.

Yes it may be too thick Chookie so I will only do one skinless piece of maryland with double coating and the others with just the one. Maybe at the weekend.

Did this one with maryland pieces cut at the joint - more messing around than the thin pieces of chicken breast but equally as nice and as DH loves sucking on bones, he was happy with them. I did skin them and as you can see from the photo, you would never know. I double dipped one but in the end I couldn't tell which one it was!. I forgot to cook them on a rack like VHJ suggested but they were fine.

JD, these look very good, Just like the original
I used some of the spice mix and mixed it with flour and dipped fish in it. Just gave it a nice 'edge".

I made these again the other day as we all loved them the first time. I split the buttermilk mix in two and added chilli flakes to one for a " hot & spicy"
for me. Yummo. Tasted fantastic hot and was just as nice cold according to DH.

Finally got around to making this for supper tonight.Really wonderful Chookie, thumbs up from this household.Used VHJ's idea of placing on a rack when in the oven and that really kept it crispy.I have a portion left for DS lunch tomorrow.

CC, glad you liked them. I also placed them on a rack, as VHJ suggested. Remained crunchy all over. I mentioned in another post that the Lebanese shop where I buy my spices has a prepared mix and it is full of flavor enhancers and preservatives. They are interested in trying some of my mix, so I have packaged up some for them, with instructions. Will be interested to hear what they think.

Gosh my boys love these Chookie. I had some diced chicken ready to create a "masterpiece" with when DS2 asked if we could have KFC nuggets. The idea worked for me - had to substitute homemade yoghurt for the buttermilk as I'd used that in the bread but they turned out really well. I even sneaked a bit of chilli in for everyone
When the Lebanese shop owners start marketing your mix and you become more famous than now, I will be able to say "my family well and truly tested the initial product
