We had a lamb roast dinner too, just the thing on a night like this.
I did roast potatoes and kumara, steamed corn, carrot and peas and zucchini muffins too - with gravy.
Now having a rum & coke with DH to finish off!

It's been wet and rainy and very windy in Adelaide too. Tonight we are having pea and ham soup with fresh chia rolls as its definitely soup weather.
My DH loves meatloaf, but I never make it as I have terrible memories of tasteless, steamed mince that we ate as kids. Last night I made Nonomix's tasty meatloaf, and I agree that it was really tasty. It wasn't "loafy" enough (not sure that's a real word?) for DH and he is threatening to cook me meatloaf with his "secret" ingredient. I'm not sure whether to be happy that he actually wants to cook, or be scared of his secret ingredient

Pork tattie pot.
Left over roast pork layered with onions, carrots, potatoes and butter beans. Tomato purée and a T of salsa added to the left over gravy. In oven for 2 hours. So easy all in one meal cooked as I worked on house.

An English friend of mine here in Australia shared that recipe with me over 45 years ago DJ - she called it a Hotpot but we didn't add the butter beans.

DJ and JD, is the liquid from the tomato puree or do you also add the gravy? and do you have quantities? We still have a freezer full of left over roast meat so looking for new easy recipes.

I used to make enough gravy with the original meal to ensure there was enough left over to pour over the top Wonder, didn't add the tomato puree as DJ does (sounds a good idea though). You just want enough gravy to eventually moisten everything - a cup, maybe a cup and a half in a casserole for 4? I used to add a little water to thin it down a tad as you know how firmly leftover gravy sets, not too much or it will be too watery. Perhaps this is what DJ's tomato puree does. It's been a while since I made this, DJ will remember her quantities easier than me.
