DH and DS ate on their way back from various places.
Had a bacon roll at lunch time.

Not a very nutritious day today, ah well.

Doing a whole chicken in the slow cooker tonight, we will have it with roast potato and kumara, zucchini muffins, steamed beans with buttered mushrooms over them, gravy and corn cobbettes.  :D

Astarra do you make a big batch of zucchini muffins and freeze them? you seem to have them with most meals.

Yep, do two or more batches at a time then freeze them in lots of 6 so just pull one bag out each time I want them with dinner.  :D  I add carrot to them as well, so know there are a few veg in each muffin, and the girls love them!!  ;D ;D  Too quick and easy!  :) 
We love our dinners here.  ;)

We had Maddy's capsicum and chorizo risotto with chicken added and a few tweaks to suit us. No complaints from anyone. Now that's a surprise!

I intended to make a new recipe tonight with a pork fillet I bought yesterday but when I sought out the pinenuts that I needed for the stuffing they had gone rancid. :-)) So plan B.Made a batch of Sage and Onion Stuffing instead.Slit the pork,bashed it flat,stuffed it with half of the Sage and Onion stuffing and wrapped it in Prosciutto.Rolled it up and tied it with string.All now ready for the oven ;)

All cooked

Sliced onto the plate.

That looks fantastic CC. Was it a really big fillet? Here they tend to be fairly small. We love pork and the kids would probably even like this.

Last night we had chicken fillet wrapped in bacon with EDC mushroom sauce, smashed potatoes and vegetables.
