That looks delicious Cornish.  I've searched Eve's pudding but came up with nothing.  Is it on the forum somewhere that I've missed?  :)

It's an old fashioned British pudding Julie.
Basically you put thinly sliced apples (I used Bramley apples sprinkled with sugar and lemon juice) in the bottom of a pie dish and spread a vanilla sponge mixture over the top of the apples.Bake in the oven until the sponge is cooked.Its an very easy pudding to make.
You can add raisins to the apple slices if you want.

We went out for a curry tonight.
We had a bit of the kitchen wall patched with plaster today as too uneven to tile or splash back.
Bit of a mess.... LOL

Mum used to make an apple sponge - I've only just remembered this was one of the few desserts she used to make back in the 'good old days'.

Tonight we are having roast turkey with all the trimmings.

We went out for Xmas lunch with the in-laws and whilst it was nice, it wasn't Xmas dinner. So we've decided to cook our own sort of Xmas dinner. We could have picked a cooler day for it though!  Judy is coming for dinner, so that makes it more special.

Lucky aren't I girls LOL.  I'm sitting here with Geoff whilst poor Katie is slaving over a hot stove.  I missed out on turkey on Christmas day so I'm really looking forward to it.
