A bit of a mixed bag here today. For DH I grilled a chicken breast and served it with creamy mushroom sauce (skinnymixers), mashed potato and steamed veg.
For me I made 2 of these little 'corn, capsicum & parmesan' quiches (one for tomorrow). A Michelle B recipe which turned out really good. So simple and served with salad leaves, halved cherry toms and a drizzle of Italian dressing. Was thoroughly enjoyed and will be made again.
A bit later I made a pumpkin & golden syrup steamed pud. Used a pudding basin in the varoma but I only made a half a serve but was still big enough to get 8 small serves out of. I reduced the steaming by 10 mins.
Having a taste I thought it could have been just a bit sweeter so have noted that, plus even though there looks a lot of sauce, by the time you come to eat it a lot of that has been sucked into the pud, so I will make the full amount of sauce next time, still pour half over when first removed from the basin and pour the rest into a jug so a little can be drizzled over each serve with either cream or ice cream.

We had an electrician here installing a new ceiling fan in the lounge and I had to go past him and out the front door to take a photo of the pud. God knows what he thought, he just smiled.

Julie, they both look great. I always make double sauce for most recipes as it never seems enough.

That’s exactly what I did Michele - Chinese Flair and potato casserole. For lunch I took out a packet of soup. I need to do this for a while as my freezers are chockers at the moment.

I bought a massive chicken so I cut it in 1/2 and roasted it in the BBQ. Had leftover veggies and made mushroom gravy. There is enough left for a meal tomorrow.

DH starts back work tomorrow after 3 weeks off, so today I made a meal in my elec pc that was for his dinner today and a few meals for work. It's called Chunky Italian sausage & beef ragu that I served with pasta. You make little meatballs from the meat inside Italian sausages and also use beef mince.
