Looking for recommendations for dinner tonight around the Darling Harbour area. We are having a little break here - DH is at conferences and I am amusing myself. Have been out a couple of times but wondering if you Sydney people have some favorites. Tnx.

I didn't find any meat in the freezer, but I did happen upon a box of crumbed fish fillets that mum has been passing up every time I offered to cook them. So I decided that tonight I would hide them in something just so I could use them and get them out of the freezer! ;D
So earlier today I baked the fish in the oven with the fan turned off so that they wouldn't crisp too much. As soon as they were done, I covered them so they wouldn't dry out. Then I put them in the fridge.
This afternoon I took them out and peeled the crumb off them. I broke it up and put it on a lined baking tray in the oven to go crispy. In the meantime, I boiled up some pasta on the stove and cooked a sauce in TM using tinned tomatoes, stock, herbs, onion, garlic, pepper and paprika. I chopped up the de-crumbed fish fillets, mixed them with the cooked pasta and a tin of corn kernels, and then mixed the sauce through it all. I poured it into a dish, sprinkled the crispy crumbs over the top, and then put it back into the oven to keep crisping until DM and SD were ready for dinner ;D

Mum said it was very tasty :D

And I finally got that box of fish out of the freezer! ;D

Well done Amy, you're great at coming up with recipe ideas and it must have been nice to get rid of that b....y box of crumbed fish once and for all  ;D  That looks a huge dish of food for 2 people, how many meals will they get out of that?

We had Chookie's Chow Mein tonight. With the cabbage I had left I've made some coleslaw for the next couple of days. We'll be bush camping for a couple of nights so no power. We have the generator but it's not worth running it just for the tmx.  The hot water system and fridge will run on gas and the Engel fridge in the car runs on the second car battery.
May all dairy items in your fridge be of questionable vintage.

Thanks Judy, it sure was ;D ;D ;D

I'd say they'll get six meals out of that if I dish up a good side of vegetables too ;)
