I had a bit of a cheats dinner, broccoli pesto on pasta, quick & easy.

Making Quirky Jo's fried rice and lemon chicken (forum) for tea tonight. Having a small taste but not eating as I am only 3 kilos from my goal weight and already cheated this week.

I did too  :)  Yummy Jo! and I love the coconut flavour through the rice.



I cooked  2 pieces of pork fillet in the oven (which had marinated in char siu sauce prior), then added that to the cooked rice and veg.

Pizza night.....so I made cajun chicken, with red onions, sour cream & avocado.
For the base sauce, I simply spread light sour cream, and sprinkled with pizza cheese.  Was really yum.

I'm not hungry at the moment maddy but that looks so inviting.  Great idea with the sour cream/cheese base.

what pizza base recipe do you generally use Maddy?  :)  :)

 :P :P  I usually use pita breads, as it's quick & easy and cooks in under 4 minutes with the pizza maker.    I prefer a thin base, as we can enjoy the toppings more.
Dough bases I find are too filling, and almost always I feel too bloated after eating them.

We had my versatile lentil sauce which we haven't had for ages, sorry don't know how to do links. Served with EDC mash, half potatoes and half sweet potatoes. I use less liquid with sweet potatoes or it ends up like purée and reminds DH of baby food, he won't touch it!!
