Only 5pm here Kim, we haven't had dinner yet ;)

I found quirkyjo's recipe for spelt tortillas on here. Also Trudy Olive's recipe which Judy posted. And one other. So I have three to choose from :)

Finally had dinner!! :D

I'll admit that while making these, I was really disappointed. My mixture was very watery and since I have never even eaten enchiladas before, I wasn't sure if that was right :-\
But I dished them up and they're sooooooo yummy, I think the mixture needed to be watery so it softened the tortillas. I loved them and definitely will be making again!! ;D ;D ;D

I will try never to be prematurely disappointed again! I lost about 20 minutes of happiness and excitement thinking those enchiladas would be a disaster :-))

Tonight we're having curry from the first TMX calendar. I'll do naan bread with it and of course rice. WArmish day so just what we need. (not)
May all dairy items in your fridge be of questionable vintage.

Great meals every one. We are having the pork belly from Tenina's Christmas ebook. We all really love the flavour of the prok belly done this way and have had it with rice the last few times but tonight I'll do a tray of all the vegies we have and roast them with some balsamic and olive oil.
