We had tortilla baskets filled with Mexican chicken meatballs, salsa & guacamole.



My kids would love this Maddy.
Do you have a recipe for the mexican chicken meatballs?

Julie your meal looks very tasty too even though I'm a vego x

Oh thanks...like a party on a plate  :)
....wasn't too happy though, as Hubby & son stuffed themselves on red rooster after the footy, so they weren't hungry  >:(  Didn't think to ring me either  :-))

Rara, was loosely based on a taste recipe.

Oven at 200c
1 kg chicken mince
2 slices bread blitzed to crumbs
2 garlic cloves & handful flat leaf parsley,  Drop on running blades at speed 7.
1 medium onion, quartered & chopped speed 5, 5 seconds
1/2 cup salsa
Around 60g taco seasoning
Mix altogether, scoop into heaped Tbsp. amounts (cookie scoop is wonderful for this), and with wet hands shape into balls, place on baking paper lined trays, and chill for 30-60 mins.
Bake for 20 mins.

I made this larger quantity because the boys always complain there's not enough meatballs....needn't have bothered tonight though  :-X

Today I made a recipe from a pasta book that I’ve had for about 12 months.  The recipe is called “Penne with herb & mushroom sauce”.

It was so tasty though I did use a lemon salt concoction that I’d made last week for another recipe instead of just adding lemon zest in this recipe.  Both DH and I both said the lovely lemon flavour is what made it, so will def use it next time.

We're having a smoked salmon and pasta dish. DHProbably won't be thrilled as we had smoked salmon pizza last night. He did get a DH type pizza too though.
May all dairy items in your fridge be of questionable vintage.

I made risotto in the  *: for the first time. Was pleased. Adapted the standard mushroom risotto recipe from the edc as follows:
-halved everything
-home made chicken stock in place of vege stock concentrate
-brandy in place of wine
-added bacon at the beginning and fresh sweet corn at the end
-used leek in place of onion and garlic

Made enough for two people for dinner and probably lunch for me tomorrow.

Now I just need to scrub the bowl - will leave it soaking for a while. Anyone got any hot tips on how best to clean the bowl post risotto making?
