Made this as cupcakes on the weekend, reduced sugar and baked for 20 mins. Made 24.
Absolutely delightful, devoured by work colleagues in one day!
Will become a regular for sure thank you!!

DH hates banana cooked in anything - says it is a result of his mum preserving bananas through his childhood

I have so many bananas in the freezer at the moment but no one at home likes banana cake apart from me
no idea what i'm going to do with them all.

Thanks Judy, no one in my family is a smoothie fan (with the exception of me and my green smoothies) and I'm not a fan of bananas unless they are in banana cake - a no win situation for the bananas in the freezer. I also thought of the banana ice cream but they are only interested in eating them if they have just turned yellow. We just don't really eat enough in our house.

Made into mini cakes in mini muffin pans, for Hubby's afternoon tea at cricket.....dropped sugar to 190g also, and baked for 15 minutes.
Made 43.
For the icing....
I increased icing sugar to 250g
decreased butter to 25 g
125g cream cheese & 2 tsp. buttermilk.
Made icing first, and popped in fridge. When cakes out the oven to cool, I took icing out fridge, and it was then perfect consistency for piping.

Made this yesterday and let me say it is the best banana cake I have had. Could reduce the sugar a little but that's only because I try and use as little sugar as possible. Very yummy!!!

I can't believe it but the quickly rotting banana made me do this . Me made a cake. Unbelievable!
I had only one large smelly banana but found some long dead but not smelly coconut flaky bits to toss in. May even make the icing if I can find some icing sugar. Going hunting in the pantry.

Found some ancient icing sugar and tossed remaining coconut shreds in with a bit of lemon juice. I am hoping my wonderful Marie the cleaning wonder will take half and DH can have the rest when he gets back from the dentist, well not all at once.
