Cheese & spinach bake

Name of Recipe: Cheese & Spinach Bake
Number of People: 4 - 6 as a side dish
Ingredients:
120g cheddar cheese
250g cottage cheese
50g butter, softened
3 medium eggs, lightly beaten
500g frozen chopped spinach (or fresh cooked and chopped).  Remove all water by squeezing in a sieve.
2 tsp plain flour
S & P to taste

Preparation:
Grate the cheese 8 sec/speed 8.
Add the remaining ingredients and mix 10 sec/speed 5/reverse.
Spoon into a greased quiche dish and bake 175o/50-60 mins.

Tips/Hints:

I only made 1/2 this quantity and cooked for 30 mins.  It is not the nicest thing to look at but tastes really nice. Found the recipe at http://www.spinachrecipes.org/cheese-spinach-bake.html

Here's a picture of a slice served with our lunch today.  To improve the appearance of it, next time I am going to lay thin slices of tomato on top & sprinkle with some more cheese before baking.

Another great recipe Judy. I'm getting peckish looking at all these photos, as Thermomixer said 'food pornography.'
May all dairy items in your fridge be of questionable vintage.

Yum! I have some filo pastry to use up, and was thinking spinach & cheese. So might try this recipe as the base. thanks!
