I had two very ripe mangoes in the fruit bowl and  825g jar of sliced mangoes in the cupboard. I made this up and poured into silicon cup cake moulds.. So easy and soo delicious. Everyone in the family loves these. :)

Yes, DH walked into to the kitchen on Saturday and looked at the things I'd baked And the two jugs on the drain board, and said " you'll wear that thing out" and walked out again. LOL

good idea Judy, we have heaps of mangos at the moment, So I am doing these again today.
My Thermomix,  Kitchen Aid, Pizza oven, Nu Wave 5 in 1, Spatulas, all brings love, laughter, happiness, and great food  to my kitchen.

I made these for the first time the other day and they were absolutely delicious. I have made three separate recipes using fresh mangos with very differing results within the last week.

1. Mango Pudding (Chinese Yum Cha style) using large fresh mango with absolutely no taste or aroma of mangos but the pudding turned out delish.
2. Mango & Coconut Ice Cream (from the Recipe Community) using large fresh mango full of mango aromas and sweet gorgeous mango taste, but the ice cream had no mango flavour whatsoever. I think the coconut milk cancelled the mango flavour out. Very disappointing and will not be wasting good mangos on this recipe again.
3. Frozen Mango Bars using fresh mangos and these turned out the best of all. We love Mango Weis bars and will be making these again and again.

Thanks for sharing the recipe. The recipe reviews and comments found on this forum really are invaluable and priceless in saving you $$ and effort.

Here's another Mango recipe for you to try MEP - Mango Kulfi hopefully you'll find it tastier than the RC recipe.  I love it.

Made half recipe and put into Popsicle moulds. Just need to get layers a bit more even. Really yummy recipe and easier for the children to eat them when on sticks.
