Isn't that funny? I made pretty much your recipe MG at Easter time. I just made it up to get rid of some rice bubbles I had in the pantry that no one was eating.

They were yummy!
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

LOL - did the same with some noodles that weren't going anywhere - MrsT loved her chocolate spiders  ;)

I winder if subbing a bit of coconut oil would help firm it up a bit?

I have made the marshmallow type twice before and man, they are sooo sweet, my sweet toothed 5 year old wouldn't even eat them! Might try these though, I have some plain puffed rice I need to use up.

My 8 year old son just loves these bars!  I tried a different version today with just chopping up a handful of marshmallows and putting them in when mixing up the rice bubbles and coconut.  They melted a bit so might help with keeping them together a bit better.   I also put them in patty pans this week instead of making a slice.  Bit of an extra treat whilst at Nan's place this week for the school holidays!   :)

Made these today and they were a great hit! Hopefully with the cool weather they will also stand up to the lunch box next week.

Copha is coconut oil, but with lecithin added.

I don't have any rice bubbles, but I'm thinking I'll make this up with the honey puffs the children wanted but don't want to eat.

I made the marshmellow version mentioned in post 14 and they were so super sweet and yummy! kids loved them.  ;D

Honey Puffs aren't as light and crunchy as Rice Bubbles, so that's probably why.

my mum has been making toffee crispy for around 20 years, its the same as these, but with toffee in too. really yummy,
equal quantities of ricebubbles,
                           butter
                           toffee
                           marshmallows.
melt all ingredients together except rice bubbles when all combined stir in rice bubbles and place in tray. chill.
sorry i havnt made these since i bought my tmx so havnt worked out how long it takes to melt and at what temperature yet.
just thought i would share as i love these so much. take them out of fridge a little before eating. they also freeze really well, perfect for serving to unexpected guests also, they dont take too long to defrost.

Today i made the marshmallow version but I put a layer of melted chocolate in the bottom of the pan then the layer of ricebubble mixture and then choc rainbow sprinkles on top, then left to set.
I find it is super sweet but that just means you cut it up smaller than 'lcm' bars are :) They are going to be a big hit when the kids go back to school next week.
Thanks for the tip about patty cases, will make it easier for lunch boxes :)

paper patty cases and greaseproof are cheap, but you could also pop a slice into a silicone patty case too to put into the lunchbox. These are good for separating little treats when pushed for space....as long as it was for a child that you know wouldn't throw into the bin when finished.

Thanks for the recipe....my eldest has been asking for these for ages as apparently his lunchbox is too healthy (is there such a thing?)....

Very easy to make....my three year old loved it and proudly shows "his" cooking.
