CP- get yourself a few 10-20ml syringes when you are at the chemist next.  They are perfect for squirting jam in these lamingtons, and also for filling profiteroles

Look at this little beauty I found in DH's medical drawer. It's huge and I must try it for sucking up cream or jam next time I make scones or fill something.  No chemist is going to suspect anything untoward if you asked for one of these CP

No I buy syringes all the time for the kids medications - it's when you ask for them with the needle you might get looked at sideway lol

The catheter tip syringes like JD's are the best as the tip is wider and therefore easier to push the jam through. Not sure if they are readily available at the chemist but certainly worth asking- even if to give the pharmacist a giggle if they ask what you want it for.

I checked with DD and she said if you ask for the bigger syringe no one will think anything of it, but if you ask for a 'fit pack' you'll get a small syringe and a few other bits of paraphanalia. Actually she said they don't really think anything of it.

CP63 you could always put on a disguise and travel to the other side of the river.

yes the 'fit pack' always gets my attention if I happen to be in chemist and it is asked for - what a name for what it is!!

True. I love to watch in my chemist for all the people who are being treated with methadone. They always have to go to the end of the counter and wait and when they have an opportunity the pharmacist goes to them and gives it to them. Most are sort of what I expect but occasionally you see 'people types' you wouldn't expect. They become very friendly with the pharmacist as they see them pretty well every day.  At least they are seeking help.

Kathryn - I believe that the "fit pack" is a syringe and associated paraphernalia, mainly for those who inject street drugs - designed to give them some sterile products.  Uh Oh, I've just read your post again and it looks like you knew that anyway.

I often go into chemists to get various sized syringes for various jobs at work (I always think it's a bit of a giggle asking for a syringe as I am as "straight" as anything) - they are used to me now as I regularly ask for all sorts of unusual things - I'm  well into my 50s and last week's request was for a baby bottle warmer (they are getting increasingly hard to find now, I believe microwaves are taking over!).

These were really lovely....I would call them cupcakes instead of muffins though  





I loved the cake texture, very sponge like.  I used shredded coconut and turbo'd couple of times with the flour.
The apple corer worked a treat to insert jam centres.
I did double the icing sugar, and added extra Tbspn. Cocoa.
I think next time I would prefer real chocolate ganache for the icing  

Forgot to mention, this made 28 regular sized cupcakes.....so you may possibly want to halve quantities.

Made these today for DS7's third birthday celebration in as many days... We used 200g sugar and followed everything else as is. Really delicious and light, and they rose really well for dipping. This will be our cupcake recipe for the future! We did make 18 muffin sized ones rather than cupcake sized though. Next we want to try as two square cakes to make traditional lamingtons.

For the topping, we had some of the hazelnut choc spread left over from birthday celebration number one, so I warmed it up and added some extra milk and used this for half of them, with dessicated coconut. The other half I used left over strawberry frosting (have family members who don't like chocolate) from celebration number two.

As per Maddy's suggestion I used an apple corer to get a hole in to add the jam, and this worked well for the most part. One "hole" fell on the floor and one fell out into the icing mixture when dipping the cake, but we recovered from both these little mishaps.

These really are such lovely, light & fluffy cupcakes  . I must remember to make the cake element again with other icings.
Naturally Australia Day was the perfect occasion








For the icing....dark chocolate ganache (make before the cupcakes)

200g dark chocolate
100ml thickened cream

In a microwave safe bowl, add broken chocolate pieces to the cream.
Heat for 1 minute on 50% power.
stir, and heat another minute at 50% power.
stir.
leave on bench to cool and thicken, stirring periodically.

This ganache is perfect for these cupcakes
