Thanks, I will try that one next time it looks easier! I woosed out on converting my recipe and used one from steph borgs site here http://www.stephberg.com/?p=957
Changed a few things to make it gluten and dairy free, left out cheese, added bacon and used orgran self raising flour instead of the 2 types of flour and baking powder, and strained the mushed vegies several times to get all the excess liquid out! It's in the oven now so we'll see how it goes

oh gluten free and dairy free sure do present a challenge ! :)

I have made this recipe about half a dozen times, left out the bacon once, added carrot once..... never fails, always turns out so perfect and easy. Everyone in the family loves it - I often make it up for lunchboxes just for something different :)

I just thought I would add my 2 bobs worth in here. :) We made the Zucchini Slice from the Gluten Free/Wheat Free cookbook last weekend and it was delicious. Definitely a different texture to what we are used to and I was slightly concerned at how sloppy the mixture was when I put it in the oven but it turned out perfectly and tasted delish!
