Sounds a lovely dip. We are having visitors on Sunday and thought I would give making this a go - do you think it would be ok made the day before. I am thinking that it would be fine and the flavours would develop.

yeah I reckon, just do the toasted seeds on the day so they are not soggy

Bought the pumpkin, bought the sour cream.....forgot the Moroccan seasoning  >:(
  Was making this tonight, to take for a lunch tomorrow.   Not going back into town again, so what would be a suitable substitute for the seasoning do you think?

I finally realized that Moroccan seasoning is also called Ras El Hanout! I made a batch last spring, using the recipe from the UK Thermomix site: http://www.ukthermomix.com/recshow.php?rec_id=82.

Thank you CP.  :)  This is a delicious dip - I can see why your fellow guests made it popular.  I took the permission from the UK site link posted by chdv (thanks) and didn't worry about the spice I was missing (allspice).  I used fresh ginger and fresh chilli  and ground them up with the fresh coriander and other spices.  Mine is a little salty so next time I make it I'll be less generous with the mineral salt when I sprinkle on pumpkin before the baking.  Next time I'll also reserve some of the little cubes of baked pumpkin for an extra garnish.  Yum!

I froze this dip and defrosted it today, perfect. Great that you can freeze it.
