Chickpea Stuffed Zucchini Boats (with photo)

Name of Recipe: Chickpea Stuffed Zucchini Boats

Ingredients:
30g parmesan
1 kg zucchini (i had 3 big ones)
50g spring onion, roughly chopped
1 can chickpeas, drained (1 can = 400g; drained amount is around 200g)
100g feta cheese
20g bread crumbs
Salt, black pepper
Olive oil


Preparation:

    Grate parmesan for 10 seconds by speeding up from 2 to 9 and set aside
    Cut zucchini in half lengthwise. (If you happen to have big ones like mine cut again in half crosswise)
    Scoop out zucchini pulp and set aside
    Cover baking tray with baking paper. Brush with a little olive oil. Place zucchini
    Mix chickpeas, zucchini pulp and onion for 45 seconds on Speed 5
    Add cheese, cread crumbs, salt and pepper. Mix for 5 seconds on Speed 4
    Stuff zucchini with chickpea mixture
    Sprinkle with parmesan, drizzle with a little oil and bake for 50-55 minutes at 160°C. Use grill for the last 5 minutes if you feel needed

Finally got around to making these, Farfallina, thought they were great! I thought they might be a bit bland, but they were very tasty infact. I added some chopped up boconccini I wanted to use up as well, stirred through by hand at the last minute. A really handy dish, vegetarians had as a main, served as a side for meat lovers. You are feeding us tomorrow night too--we are having your ratatouille crumble with or without steak! Thanks for all your great vegetable dishes :)

I am so glad to hear you enjoyed them Lellyj!
I believe also bocconcini were a great addition, any kind of cheese would be for my palate :)
