We had these for the first time last night. I just used lightly beaten egg white to brush over the potato and I was pleased at the way they turned out. Thanks Maddy and Judy.
May all dairy items in your fridge be of questionable vintage.

Marina I just ground up rice and mixed it with the egg white and it seemed to work. They were really nice and a change from roast potatoes.

I was a bit wary of making these because of so many posts in the past about problems and the pros and cons of mashing potatoes, however, I made them at the weekend and they were delicious.  Unfortunately I was a bit heavy handed with Maddy's egg white / rice flour wash and that over-powered them a little (my fault for putting too much rice flour in with the egg white).  Next time I will make them Judy's way. Very easy to make and incredibly moreish (good thing that today and tomorrow are my fasting days).

We were so greedy that we even liked them cold.

Marina I just used the egg white leftover and brushed them with that.

Just in case anyone is interested - I use Nuttelex in place of the butter which then makes this a dairy free recipe  :D

Have the potatoes for these mashed again now - to find out I had only approx 10cm of baking paper left... :-\
seeing what I can find to use instead cuz I don't want to go shopping....... :)

Ah ha - knew I could, found a roll of telfon sheeting in the back of the cupboard, so cut it to size and used that.  8)
Best thing is - it is washable and reusable  :D :D
