It was fine the next day, the cabbage had gone a little softer but still a good flavour.

I used breast fillets but cooked them for about 3 minutes longer than the recipe stated as the centre of some of the pieces was still raw after the cooking time.

Thanks JD, I did, once I got over the fact I was stuck on there no matter what! Bit claustro the first day, but then it forced me to relax, which I really really needed. Struggling to get on with it now though!!

Well I made this today and it is delicious! I wasn't too sure if I would like it as it's Asian but it definitely is yummy!

It's a pretty quick and simple recipe to make too. I liked how you cook the chicken in the simmering basket (I ended up using chicken thigh fillets and cooked for 3 extra minutes as someone suggested) and even more so, I love how the TMX shreds the chicken!

Like Lelly, I am lazy and next time will chop the peanuts and the salad ingredients in the tmx first before rinsing out to start the recipe.

Certainly a dinner spinner winner.

No it's very much an average camera. I have found that if I can get natural light on the food, the photos turn out a LOT better.

Oh and I just remembered, I added a lot more chicken than it says and will probably increase once again and I deseeded the chilli.

Made the shredded chicken salad last might. Used a different dressing for the kids as it was quite fishy (with 50g fish sauce) but lovely. We even added a little balsamic to it.

Had left over turkey from Xmas so used that. Perfect. Kids very happy to add this to a dinner menu option. Yay love adding ones the kids love that are a bit different.

Absolutely loved the chicken salad with Vietnamese dressing! 

The flavours of the dressing left a lovely after-taste.  Must admit I only added a few drops of fish sauce as I'm not a big fan, but it turned out perfect.  This would make a lovely salad even without the chicken. 

I can see me making this one often.

Made the Vietnamese chicken salad, changed the dressing a bit, added coriander and sweet chilli sauce, no chilli, and wanted to use up the coriander, didnt add the sugar, less lemon juice and it was yummy. Trying to use up food before we go away tomorrow.
