I actually made the sponge at 10pm Christmas Eve, and after I rolled it up to cool, I fell asleep on the couch....and woke up at 3.30am
I quickly iced it and popped it in the fridge....then realised not 1 Christmas present had been wrapped!
So bleary eyed, I made the meringue mushrooms when the kids woke up.

The icing was a mousse like choc buttercream, and the sponge without additions, was just like a sponge.
It was a simple dessert, which was good after a heavy Christmas lunch.
If you were wanting more punch, definitely add flavour additions as listed in recipe, or maybe go for a Black Forest roll, if you were wanting something a little richer.
