There was a recipe around years ago that used the lattice biscuits with the jam in and a packet of cheesecake mix. We have come a long way since then.
May all dairy items in your fridge be of questionable vintage.

I've just made this for our Probus birthday party on Friday.  I recently had a slice like this in a cafe and the topping was nice and creamy, not like the usual icing sugar/passionfruit version most people use.  How do you think this Creamy Vanilla Frosting would go http://www.forumthermomix.com/index.php?topic=6722.0.  If I do use the passionfruit icing I would want it to be quite firm not runny like I see in quite a few pictures of this dessert on different websites so if anyone could tell me the correct ratio I would appreciate it.

Here in the UK Judy Vanilla Slice just has a glace icing on the top.Hopefully someone comes to answer your question as you are always ready to help other people's cooking dilemmas.

It has to be, literally, decades since I iced anything Judy, but when you are making the icing would it be worth starting with a really thick icing mixture then slowly and carefully watering it down until you get the texture you are looking for?  You have probably thought of that already, though.

Yes Marina but then I'm not sure how hard it sets afterwards, that's the problem I think.  I'd hate it to crack when I cut it, I just want it firm enough not to run all over the place.  I still have a few hours to decide what to do but I'm leaning towards the creamy frosting as I know how that ends up.  I'd cut the slices then pipe the icing on.
