Ingredients:50g parmesan
3 sage leaves
1 sprig of rosemary
40g bread crumbs (or stale dry bread)
400g chicken breast, cut into pieces
20g olive oil
Salt
Nutmeg
Freshly ground black pepper
1 egg
30g butter
100g fontina cheese (or some other cheese you like, I used emmenthal)
30g onion
200g beer
200g water
1 tsp Thermomix vegetable concentrate
Flour
Preparation: Put parmesan, bread crumbs, sage and rosemary leaves in TM Bowl and chop for 10 seconds on Speed 9.
Add chicken and mix for 5 seconds on Speed 9.
Add 1 tbsp oil, salt, pepper, nutmeg and egg. Mix for 15 seconds on Speed 5.
Cut cheese into strips
Oil your hands.
Get pieces of minced meat and flatten on the surface. Put 1 or 2 strips of cheese in the center of each meatball, roll, stick the ends, flour and place them in steaming basket.
In a clean TM Bowl put onion and chop for 2 seconds on Speed 5.
Scrape down the sides with spatula. Add butter and cook for 3 minutes at 100ºC on Speed 1.
Add beer, water and veggie stock concentrate. Insert steaming basket.
Cook for 30 minutes at 100ºC on Speed 4.
Transfer them into serving plate. Dress with some beer sauce remained in TM Bowl. (If you wish you can thicken it by adding 1 tsp of corn starch and cooking 3-4 minutes more. Remember to thin starch with a little water before adding into the sauce)
Unbelievably I forgot to use the sauce
Luckily we liked them also without.
I served chicken meatballs with some vegetables.

Not knowing how big to make the croquettes and not even thinking to check back on your photo, I ended up with only 7 (DH could only eat 1 though and I should have stuck to 1 myself). I stood them on their ends in the steaming basket. As I wanted to steam some vegies at the same time, I cooked them for 20 mins/varoma temp/speed 3 then thickened the lovely beer gravy with just a tad of cornflour. We will have a sandwich with a cold sliced one tomorrow and the rest I will slice and serve the sauce over them with mashed potato & different vegies. Thanks so much for another great recipe. I can't believe 1 chicken fillet goes so far with some of your recipes.
cookie - We loved this too farfallina. I made 7 and copied Judy by standing them in the basket. What wasn't eaten for dinner disappeared at lunch the next day. Next time I will use a different cheese as I used cheddar and it all leaked out.
JD - I used cheddar too Cookie but only used half of what I had cut into batons, 2 small batons per croquette. A small bit oozed out but not a lot. I don't like buying special cheese for something for which I am only going to use a very small amount.
