I agree CP - it certainly makes a lot
I don't think I've ever seen so much fried rice!!

I did make it as a side dish and there is only two of us, next time I'll only make half

We both enjoyed it  :)

We loved this fried rice.  I started this earlier in the day as I like my rice to be cold when I stir fry it and I like to have everything prepared and ready to just throw into the wok/frying pan at the end of the day. I only did 1/2 the recipe for the 2 of us  and it's enough for 2 meals, 1 with the pork ribs from the same book and another on it's own. Full recipe says it serves 6 but I think it's more like 8 - 10 serves. I only used 10g of the sesame oil as I always use that sparingly and I was wondering if there is a difference between Pure Sesame oil and Toasted Sesame Oil as I have only seen the former in Foodland.

same. I remember reading somewhere that its better (could have been on the forum)

This is very similar to how I make my fried rice.....I did add less soy and oil, and prefer to cook off the veg a little first before adding the rice.



Like Judy mentioned, I also cook rice earlier and chill in fridge before adding to the wok.

I made this yesterday for lunch. I cut the amount of rice by 100g and used a red onion instead of spring onion as that's all I had. I also quickly fried off all the vegies before adding the rice into the wok. It was delicious and made heaps even though I added less rice. I only had pure sesame oil like a previous poster mentioned, not sure what the taste difference would be but we were very happy with the recipe and will make it again :)

This was a convenient way to make fried rice. I used medium grain calrose rice. Would be interested to know what others have used. I added chicken to make it a meal, rather than a side dish.
