I make a Cauliflower soup by sautéing
2 oils and half a bunch of celery in a little oil then adding
a whole cauli, 1 cup of milk, a litre of stock and 1/2 a teaspoon of smoked paprika and 1/4 teaspoon of cayenne pepper, salt and cracked pepper.
100c for 20 min and then purée.

I made the EDC Cauliflower soup last night for dinner.  Was surprised at how thick and creamy it was - I agree with you ahoney it would make a great white sauce on a lasagna! We all enjoyed it but it did need the Parmesan cheese.

I tried it but used half potato and half cauliflower, also added 1 tsp of Organic Herbamare for salt. Everyone at home loves it. We have it every fortnight or sometimes every week now that it's winter. Sometimes I add Parmesan cheese but sometimes I forget, either way we love it.
