Prawn & Corn Gumbo - For Foods Sake

I'm going to sound like a record, but this again was delicious! Such a meal in itself.
I used closer to 900g green prawns otherwise I followed the recipe and served with crusty bread.

Yes you are right CP. We love prawns and thought this the perfect amount in this meal for us. I will get the same amount again.

Absolutely delicious. Fantastic as a light meal in itself.
I only had about 400g prawns and it was still wonderful. DH loved it!

Like MJ, I only used 400g prawns in this recipe. Not sure it would serve 4-6 as stated as we had more than half for lunch in deep soup bowls and what's left will have to be poured over some rice to stretch it far enough for another meal. The only thing I would change is the quantity of lemon juice - will try 25g next time as initially the lemony taste was a bit strong for me. Mind you, I soon got used to it but will still reduce it by half another time. I used red capsicum instead of green and to help when buying fresh corn for this recipe, 1 medium sized corn cob will yield the 120g of fresh corn kernels this recipe calls for. You also need to slice the celery quite thinly too as some of my thicker pieces were not cooked enough.
We both enjoyed this meal, very quick to cook once you have assembled all the ingredients.
