When I make apple turnovers, I steam the apples in a container in the Varoma with custard powder (I know, I know,,,,E102) and sugar. Thickens them nicely with some flavour. Then encase them in a circle of puff pastry. It always lifts at the edges, so when cool, pipe in some whipped cream!
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I brought some cooking apples yesterday from the veggie van and when I brought them inside I realized that I already had heaps . So I think some apple pies are on the menu :)

I am going to make pies soon. Would you use puff pastry on the top and bottom or short pastry on the bottom?

Think I might make some more too. Last time, the bought pastry was shortcrust.

I would  use shortcrust for both or bottom shortcrust & top puff pastry.

I agree with Hally, make your own shortcrust from the EDC for the bottoms and use puff pastry sheets for the tops.  I've done it that way when I have time but have also used puff pastry top and bottom when in a hurry. My own shortcrust didn't brown enough for the tops I found.

Thanks Judy I have some bought pastry in the freezer so won't make my own just have to buy the apples. DH is going away for work tomorrow so might make them next week now :)

If you only use the apples and sugar is that enough? You don't need anything else to thicken or are they thick enough?
