When DH and I were very poor uni students, a night out for us was to head for Carlton and have a Pizza. The Pizza we liked best was one filled with garlic and lots of Mozzarella cheese. This is a version of this and would make an excellent addition to a lunch box.

No recipe just a process. Use whatever bread recipe you like. I added the olive oil and 2 egg whites to the basic No Fuss recipe, reducing the water to 250mls.
Prove dough to double .
Tip on to mat and divide in 1/2.
Spread dough to fill baking tray, I stretched and used a rolling pin.
Brush with oil infused with lots of garlic. No Uni ,( not quite 1 kilo
)
Scatter with grated Mozzarella and anything such as olives, sun dried toms, ham etc.
Cover with other 1/2 of dough, lightly cut into dough along the length and brush with infused oil. Mark into 8 pieces with a pastry scraper.
Let rise to nearly double, and bake on a pre heated oven, 200/220 for about 25 mins.or until cooked.
This can be Filled with what ever you like. Half could be filled with one filling and the other half with something else.
