I agree. I have a heap of butternuts growing in the garden now. I should check them now that the weather has turned as at least some of them should be ripe by now.  My favourite pumpkin soup recipe roasts the pumpkins with some carrots, onions and red capsicum in the oven first. It really intensifies the flavour and makes it really yummy. Oh, if it wasn't dark outside,  I'd run out and pick one and start cooking.
Dede, you have made me crave pumpkin soup, but like you I will need to make another type of soup as DH and DS don't like pumpkin  :-\

I actually quite like the pumpkin soup recipe in the EDC, with a couple of slight modifications (tips obtained on this forum).

I follow it by the letter, except I use half the stock (250gm instead of 500gm), and use 2tbps coconut cream instead of cream (I think the coconut cream idea was in the EDC under variations actually).

Tastes great in my opinion.  My mother-in-law thought it was the best she's ever had.

I often do the coconut cream thing as well and add a bit of coriander to jazz things up. Otherwise I use quite a bit of Vegie stock ie more than the recipe states in the EDC if I'm using that version.

l will have to agree with maddy   l love pumkin soup but hate it made in the thermie
l dont know why
l made two excalty the same except for one was in the thermie one on the stove top
 and did a blind test and l thought the one made in the thermie was not as nice as the one made in a pot
 l wish l knew why as l love pumkin soup and its so  quick and easy in the thermie

Interesting Nazar. You would think the end result would be the same. I know my pumpkin soup made in the TM was ok (not brilliant ) but ok. But I really think the pumpkin was to blame not being a string enough flavor.

I love pumpkin soup, I make it all the time.
I also add some curry powder when i start.

Yep curry powder would be something I would add. Sounds nice. We have 2 big pumpkins I need to use up so there will be more pumpkin soup for us. :)

i have a lovely recipe for pumpkin jam, but a can not findit  i have been looking for it for a few months now, i really should email my DB for it agian

I made the EDC pumpkin soup yesterday when my mum dropped by unexpectedly (trying to convince her to buy a TMX!) used butternut pumpkin from our garden and it was delicious! The onion was an extremely strong one though so that might have added a lot of flavour. Will try a couple of the other variations suggested here as well...

Was browsing through the Malaysian cookbook which Katie lent me and came across a Pumpkin Spread recipe Uni, quick and easy too. I will post it in jams.
