Title: Panini bread rolls

This recipe is adapted from this (http://www.cherrapeno.com/2008/10/panini-rolls-for-world-bread-day.html) recipe and makes 10 rolls suitable for sausages, hot dogs or, as the original recipe was intended, filled with fillings of choice and cooked in a sandwich maker.  Thank you to jakodai for giving this link in one of her postings.

Ingredients

1 sachet dry yeast (7g)
600g bakers flour
1 tspn sugar
1 tspn salt
1 - 2 tspns bread improver (optional but it works well for me)
1 tblspn olive oil
370mls warm water
1 beaten egg to glaze, optional

Place the ingredients into the TM bowl in the order given.
 
Knead for 4 minutes.
 
Leave the dough in the TM bowl in a warm place until the dough has doubled.  It's ready when the MC has been pushed up and out of it's hole - 30-40 minutes.

Remove the dough to a silpat mat, cut it into 10 pieces with a dough cutter (not with a knife as you will damage the mat).

Knead each piece into a long roll shape * and place onto 2 baking trays.

Preheat the oven to 180oC at this stage.

Cover and allow them to rise until doubled in size, brush with the beaten egg and bake in pre-heated oven for 14-16 minutes.  I did 15 minutes and they were perfect.


* If you are going to use these rolls in a sandwich maker you will need them to be fairly flat so flatten them with your hands or a little rolling pin at this stage . This is what the recipe says but I have put my rolls into my jaffle maker (cut in half to fit) and they worked perfectly well as you can see by the photo below.

did u add  bread improver ?

OK, have changed it to 1 - 2 tspns Uni and will try 1 tsp myself next time  ;)

i have made bread with out it but its not the same. i was so tempted to add it to the varoma bread, but will try with it next time.

I stopped using improver and added 2 tspns cider vinegar to my bread mix. It works well and I believe it has a preservative effect too..... Not that a loaf lasts long anyway:) also a small dollop of sour cream has a nice effect on the dough.

If I grind wheat for some of my bread mix I soak the wheat with the usual amount of water for the bread plus the vinegar for at least 4 hours and that seems to make a lighter grain loaf as well then add  the plain flour if you are using and carry on as usual. Read somewhere that it's better to soak grains anyway.

These look great Judy.  Is it bad to say I could eat that sausage in bread and potatoes right now? (haven't had breakfast today).  :-))

They look great ill be trying these! My husband has paninis for lunch most days- a 4 pack costs a fortune usually :)

For lunch today I thought I'd try a squashed panini but not having a sandwich press, I used my jaffle maker and it worked a treat.  Posted a photo with the recipe.

Julie, I could never last to lunchtime if I hadn't eaten breakfast.
CGL, I've never seen panini rolls in the shops - hey that might be because I don't look, there is no need to when you make your own  :-))

I made these today and we enjoyed them for lunch.

My dough was quite sticky for some reason and I had a lot of trouble shaping them into long rolls.  I ended up with a collection of different shapes and sizes  :D.  It didn't matter really as they were lovely and soft and delicious.

I think we will have to have another with our dinner tonight (which is JD's cheese & broccoli soup - my OH favourite meal at the moment  :)).

I've made 2 batches now Katie and neither batch was what I would call a sticky mixture.  It was really easy to work with. I don't know why yours would be sticky but if they turned out nicely, then apart from the shaping problem, it doesn't really matter.

I normally add some flour from a shaker while I'm kneading them into sausage type shapes. That helps a little with managing them. Having said that, they very rarely end up the same shape... Lol.

Katie,  you did use 370ml and not 370g?  I think the 370ml worked out to about 340g if my memory serves me.  :)

Oh I used 370g of water, maybe that is why it was sticky. I did make the dough just before I ran out the door this morning so I probably wasn't paying attention!

They were lovely rolls, but just not shaped as nicely as I would have liked.

Because I mix boiling water with tap water to get the right temperature for bread making, I always mix it in a measuring jug and not straight into the TM bowl Katie.  I though Julie was spot on with your stickiness but I just measured 370 mls into the TM bowl and it weighed 370 gms. I use Laucke's white bread flour so I don't know if the flour we are using is different.

I thought 370g would equal 370mls, so I didn't measure it in a jug.

I used Lighthouse white bread flour.  I know different flours can give different results.  I did make the dough in a hurry though and might have done anything!  I didn't really notice it was too wet, until after I'd left it to rise and started to make my rolls.  I had to oil my hands and just make the best shapes I could.  It tasted lovely though so I was more than happy.

Not just this batch or recipe, but I always wish my bread and rolls looked as nice as the ones in the photo's I see on here  ;D
They never do!

I sometimes weigh things on my digital scales if the TMX is busy doing something else but when I add it to the bowl, it never seems to weigh the same amount (usually less) too Julie.  When I did the water test tonight, I was very surprised it weighed the same.

I've actually been using my digital scales more and more as I feel I can trust them more, but the other day I measured 350ml of water in a jug and added a further tbs to get the 370 right.  I then poured it into my TM bowl to get the weight and it said 340g  :-\ It is annoying as 30g can make a big difference to a recipe like this.  Anyway thanks for checking it Judy, I'll be more careful from now on.  :)

I made these yesterday, lovely rolls. I too had a sticky dough, no problem shaping them, although in the oven they spread out a fair bit so ended up more rounded than intended.

Speaking scientifically 1ml water should weigh 1g at sea level. I don't think the sea level would make too much difference though.

Made this recipe into 3 bread sticks today - cooked them for 20 minutes, turned them over and cooked a further 7 minutes 180oC.

Making these atm.

Chose these as we needed some rolls for sausages & so simple.

Pain a bit more barable today, lets hope it stays that Way.
Some days I cant even carry a glass of water.

I used Lighthouse white bread flour. 

Interesting. I use lighthouse wholemeal flour and find I generally have to add less water to bread than the recipe states. That is the opposite to the general recommendation that you need to use more water for wholemeal. Perhaps something to do with the way they process the flour.

So yum! So easy! So Quick!! We even have enough for tomorrow's lunch!

I was struggling to work out what to make for tea tonight. Hubby out and me being tired and emotional from work and clingy kids! I set the kids to work and they helped me make them. I got inspiration from Judy!

We are on bread machine bread as of tomorrow. I'm not happy but as we have no oven it is the best we can do.

Yes JD dh has requested more :)
