Panini bread rolls

This recipe is adapted from this recipe and makes 10 rolls suitable for sausages, hot dogs or, as the original recipe was intended, filled with fillings of choice and cooked in a sandwich maker.  Thank you to jakodai for giving this link in one of her postings.

Ingredients

1 sachet dry yeast (7g)
600g bakers flour
1 tspn sugar
1 tspn salt
1 - 2 tspns bread improver (optional but it works well for me)
1 tblspn olive oil
370mls warm water
1 beaten egg to glaze, optional

Place the ingredients into the TM bowl in the order given.
 
Knead for 4 minutes.
 
Leave the dough in the TM bowl in a warm place until the dough has doubled.  It's ready when the MC has been pushed up and out of it's hole - 30-40 minutes.

Remove the dough to a silpat mat, cut it into 10 pieces with a dough cutter (not with a knife as you will damage the mat).

Knead each piece into a long roll shape * and place onto 2 baking trays.

Preheat the oven to 180oC at this stage.

Cover and allow them to rise until doubled in size, brush with the beaten egg and bake in pre-heated oven for 14-16 minutes.  I did 15 minutes and they were perfect.


* If you are going to use these rolls in a sandwich maker you will need them to be fairly flat so flatten them with your hands or a little rolling pin at this stage . This is what the recipe says but I have put my rolls into my jaffle maker (cut in half to fit) and they worked perfectly well as you can see by the photo below.

i have 1/2 batch on the 1st rise now

did u add  bread improver ?
i don't need a recipe i'm italian

i getting good results in using only 1 tsp of bread improver these days  ;D

OK, have changed it to 1 - 2 tspns Uni and will try 1 tsp myself next time  ;)

i have made bread with out it but its not the same. i was so tempted to add it to the varoma bread, but will try with it next time.

I stopped using improver and added 2 tspns cider vinegar to my bread mix. It works well and I believe it has a preservative effect too..... Not that a loaf lasts long anyway:) also a small dollop of sour cream has a nice effect on the dough.

If I grind wheat for some of my bread mix I soak the wheat with the usual amount of water for the bread plus the vinegar for at least 4 hours and that seems to make a lighter grain loaf as well then add  the plain flour if you are using and carry on as usual. Read somewhere that it's better to soak grains anyway.

These look great Judy.  Is it bad to say I could eat that sausage in bread and potatoes right now? (haven't had breakfast today).  :-))

They look great ill be trying these! My husband has paninis for lunch most days- a 4 pack costs a fortune usually :)

For lunch today I thought I'd try a squashed panini but not having a sandwich press, I used my jaffle maker and it worked a treat.  Posted a photo with the recipe.

Julie, I could never last to lunchtime if I hadn't eaten breakfast.
CGL, I've never seen panini rolls in the shops - hey that might be because I don't look, there is no need to when you make your own  :-))

I made these today and we enjoyed them for lunch.

My dough was quite sticky for some reason and I had a lot of trouble shaping them into long rolls.  I ended up with a collection of different shapes and sizes  :D.  It didn't matter really as they were lovely and soft and delicious.

I think we will have to have another with our dinner tonight (which is JD's cheese & broccoli soup - my OH favourite meal at the moment  :)).

I've made 2 batches now Katie and neither batch was what I would call a sticky mixture.  It was really easy to work with. I don't know why yours would be sticky but if they turned out nicely, then apart from the shaping problem, it doesn't really matter.
