Title: How long Vege Stock Concentrate last really?

I've made a batch of EDC's Vege Stock Concentrate last week but wondered how long does it really last in fridge?

In what type of containers do you guys store the VSC in that works best for you?

I have no idea... ours has always been used within 6 weeks....  :D

I store ours in glass jars in the fridge.

Could you freeze it in an ice cube tray and then in another container for convenience if you don't think you'll use it enough?  ???

I made my veg stock in Jan (I had only had the TMX for a few days....I was busting to make a risotto), and I stored it in an old vegemite jar (big one), and a little bit in a baby food jar.  Used the baby food jar first, and the stock in the vegemite jar is still fine.

With the cooler weather upon us darls, you will find you will definitely use it all up before it goes off.  I've never thrown any out.  My last batch is dated 16/10 & is almost finished and still good.  I did freeze a small quantity in ice-cube trays but it doesn't freeze because of the large amount of salt. It is still in there though & I will use it when the fridge stock has been used. I store that in a largish glass jar but it is probably easier to use smaller jars for ease of removal. I just use a long handled spoon.

I use large glass jars to store it, and it lasts in the fridge at least a couple of months, probably more.

Ditto, Ditto!! Large glass jar (cherry jar) would never go "off" in the time we use it.  ;)

I was so overwhelmed by the amount produced in the UK Fast & Easy version (not sure if it is the same as the EDC) that I contacted TMX HQ and asked how long it lasted.

Janie said she'd had hers for 6 months and it was still ok - it was kept in the fridge.  I think the high amount of salt in it helps act as a preservative.

Mine lasts for about 6 months. During the summer months when I use less I only make 1/2 a batch at a time.

ceejay, really!!! i end up with 2 large pasta sauce jars and usually a half a small jar too from each batch! mine usually lasts at least 6 months but probably longer (i generally have chicken, vegie and beef in my fridge so it does take a while to get through 9 jars full lol

We only use the vegie stock concentrate... and I finally managed to part with some for a friend to try last week.. but that's my 6th lot since TiM arrived 8 mths ago.... :P

I store mine in the smallest size Glad container and freeze all but the one in use.
It doesn't freeze completely, but I feel better about it being in the freezer.

Don't think many bugs would grown in the stock concentrate, but in the freezer is always a good idea.  :-*

I can recommend using the full amount of salt if you're not going to freeze it! I made up a batch with far less salt than recommended, and a couple of weeks later it was starting to make us sick when we used it in soups.. :o

Now I freeze it in icecube trays - agreed that it doesn't fully freeze, but it hasn't made us sick either!  ;)

* Sick as in - bloated and uncomfortable tummy. Nothing life-threatening! lol

Just wondering if anyone has tried bottling the vegie stock concentrate?  As in, putting into hot, sterile jars and leaving in the cupboard?  I'm assuming that it would keep, but have no idea.

I can't answer your question Greenie, I always keep mine in the freezer - because it doesn't freeze solid I simply spoon out however much I want at any one time then it all goes back into the freezer.

I only put 50g salt in mine and then spoon it into icecube trays and freeze it. When frozen I pop the cubes into bags and keep them in the freezer and pick out how many cubes I need, when I need them.
I figured we didn't need to have as much salt as the recipe says. I can always add a little salt to my dinner at the table, but it is darned hard to get out of a dish if I've overdone it!

Good idea keeping it in the freezer.  I went to use some last night and found mould growing on the top and sides.  Brave mould, I say, given the amount of salt in it.   Maybe I should try and capture some of the mould to make a particularly special kind of sourdough starter  :D :D :D

It might not be acidic enough. The higher the acid content, the more preservable things are. If you have some sort of pressure canning set up (like what is used for preserving meats in bottles or cans) you possibly could make it work.
