Just wondering if anyone has tried bottling the vegie stock concentrate?  As in, putting into hot, sterile jars and leaving in the cupboard?  I'm assuming that it would keep, but have no idea.

I can't answer your question Greenie, I always keep mine in the freezer - because it doesn't freeze solid I simply spoon out however much I want at any one time then it all goes back into the freezer.

I don't know that it is ever around long enough to get to a use by date!

I only put 50g salt in mine and then spoon it into icecube trays and freeze it. When frozen I pop the cubes into bags and keep them in the freezer and pick out how many cubes I need, when I need them.
I figured we didn't need to have as much salt as the recipe says. I can always add a little salt to my dinner at the table, but it is darned hard to get out of a dish if I've overdone it!

Good idea keeping it in the freezer.  I went to use some last night and found mould growing on the top and sides.  Brave mould, I say, given the amount of salt in it.   Maybe I should try and capture some of the mould to make a particularly special kind of sourdough starter  :D :D :D

It might not be acidic enough. The higher the acid content, the more preservable things are. If you have some sort of pressure canning set up (like what is used for preserving meats in bottles or cans) you possibly could make it work.
