Questions? Technical Issues? The Survival Guide / Natvia/Stevia in Sorbets?

Hi everyone! Just a question re sorbets - is it possible to use Stevia or Natvia in place of the sugar? Would that work? Has anyone tried it?
For those of you in other countries, Stevia and Natvia are natural sweetners, similar to Equal in texture but without the aspartme etc
