This is my all time favourite dessert recipe which has taken five years to perfect! Adapted from the best selling book Nigella Express, it's quick, comforting and so easy to make in the Thermomix.
Name of Recipe: Self Saucing Chocolate Pear Pudding
Ingredients:
* 1 x 825g can of pears halves in juice or 2 x 400g cans
* 125g plain flour
* 25g cocoa powder
* 100g brown sugar
* 150g soft butter, plus extra for greasing
* 50g milk
* 1 teaspoon of baking powder
* 1/4 teaspoon of bicarbonate of soda
* 2 eggs
* 2 teaspoons of vanilla extract
Preparation:
1. Preheat the oven to 200C or 180C fan forced and grease a 22cm square ovenproof dish or one of similar proportions.
2. Drain the pears and arrange them on the base of the dish.
3. Put all the remaining ingredients into the mixing bowl and mix for 15 sec/speed 5. Scrape down the sides of the bowl and mix again for 15 sec/speed 5 until you have a batter with a soft dropping consistency.
4. Spread the batter evenly over the pears and bake in the oven for 30 minutes.
5. Let is stand out of the oven for 5-10 minutes before serving.
