Not sure if this helps but I make Nigella's Clementine Cake. Her recipe states to simmer clementines much like your mandarins. I found a useful time saving tip to cook the fruit whole in the microwave. I put my fruit in a microwave able bowl, add water (about a third of the way up the fruit) put a lid on the bowl and cook on high for 10 minutes (I do start checking after 5 minutes and turn my fruit over). When the fruit is cooled - I then blitz the contents of the bowl; water, peel etc to a purée. I also buy the larger bags of clementines, because I pour my puréed fruit into freezing bowls and freeze. When frozen transfer purée  from bowl into freezer bags (gives me use of bowl back). When I want to make a cake - I remove purée from freezer bag and defrost the purée in the original freezer bowl overnight. The next morning the mixture may have separated a little but this is fine - stir and use all the liquid, don't be tempted to throw the watery looking liquid away.

Increase microwave cooking time as required for double or more fruit quantities.

I had left over pizza dough in the fridge & a pack of 10 pork sausages. Whilst I had the sausages cooking in one pan - I had another pan softening & browning some sliced onions. Divided my dough into 10 squares; big enough to wrap around the sausage. Spread a thin layer of wholegrain mustard on the dough, layered the softened onions, finally adding the sausages and rolling. Delicious! Cross between sausage bun & calzone. They were all eaten  :o

Yum, nice thick creamy yoghurt - I am really pleased with the taste and texture  :) so is DH; he's been tucking in already :o

Going to make the CADA mix http://www.youtube.com/watch?v=v8OsNu02fXo hoping the family will have it for breakfast. I also made cashew cream this morning from the same video link - but it tastes quite bland ??? Hopefully that will taste better with something as opposed to being on its own :-\

Alas Greyhoundmum I wish I could say it was warm North Yorkshire - it is 3 degrees at the moment, grey skies and damp underfoot. I smile  :) when I read on the forum that someone has picked lemons from a tree  :o how I envy you that.

On the flip side however, as much our weather in the UK can be a bone of contention I realise we are not subject to the extreme weather conditions like we have seen this week with Hurricane Sandy. It saddens me immensley when you see lives lost and homes destroyed  :'( :(. No fires, floods, hurricanes, tsunamis or earthquakes like we see across The Globe. So when I weigh everything up I feel blessed and know I am lucky to live in this 'safe' climate. Just means I have to take more holidays to find the sunshine  ;)

I was going to add 'live' plain yoghurt as my starter ???  However the (Greek) yoghurt I was going to use doesn't have 'live cultures' in it  :o so I'm going to buy some cultured plain yoghurt today. Hopefully I'm doing a food shop this afternoon so I will make the yoghurt later on and report back tomorrow.

Thank you again and well done on your success - you both have homemade yoghurts that are edible and usable - hope to achieve the same (will be good to use my redundant Easyio containers)  :P

Judydawn look forward to hearing about your comparison with full cream milk  :)

How have I managed to miss this thread before?  :o

Amy, I think you have answered all my prayers as I am usually stuck as to what to have for breakfast (not a cereal fan to be honest - cardboardy & bland IMHO) I also prefer hot food/drinks given a choice (I blame UK climate :P) - so me thinks this is going to a perfect solution.

I will have great fun shopping for this recipe tomorrow - then I can play  :P and report back  ;D Yay!
