Recipe Requests / Re: Fresh Rice Noodles
« on: August 27, 2010, 05:35:16 pm »
All hail Chookie for all her hard work, I must confess I've spent a grand total of several minutes thinking about this since I posted it  :D but I have a good excuse, my kids have been sick!

They are better now, hubby is taking them out for the whole day tomorrow while I TMX up a storm for my T'ware party at 2pm, maybe I'll get time to try the noodles as well :)

Just thought I'd put this one out there before I try it in case it's been tried before.

You make a batter of rice and water then steam it to set the noodles, it says not to use a food processor but seeing as I reckon the TMX isn't just any old food processor, it's worth a go ;)

Recipe Requests / Brown Rice Risotto
« on: August 02, 2010, 11:27:31 pm »
Anyone made risotto with brown rice? I've found a few recipies for non TMX procedure, wondering if I just increase the cooking time or liquid amount, or do it radically differently? Leave it to soak after I saute the rice?

Thanks  :D

Recipe Requests / Re: Preserved fruit in sorbet?
« on: November 16, 2009, 03:41:16 am »
We have a ridiculous amount of freezer space (270L upright freezer plus 2 fridges) and yes, they always seem to be full  :D We have a full sheep every month, and I buy chickens and beef in bulk, plus all the other stuff we probably shouldn't eat anyway  :-)) I also don't like using frozen fruit in sorbet, and taking it out in advance would be a PITA, I usually only get a few minutes here and there to do it (the baby objects to that amount of noise for so long without being held so can only do it when DH is around).

Thanks for the tips with the preserving. I wasn't planning to put sugar in when I preserve them, just water. I did some peaches that way for DH last year and they were OK, he added a little bit of sugar when he put them on his cereal. Have to find my book.  Otherwise, not having to add sugar when I make the sorbet sounds good to me anyway! The fewer ingredients the better ;) Crack open jar, drain liquid, add ice - sorbet! I might give it a go on a small scale this year and see how it is :)

We love orange sorbet more than anything, and although you can get oranges at the stupormarket most of the year, they're not very nice after being stored for a long time  :-)) Has anyone used home-preserved oranges in sorbet? I have a Fowlers Vacola  ;D

Questions? Technical Issues? The Survival Guide / Re: I've dinged me rim!
« on: September 30, 2009, 06:23:23 am »
Thanks for the replies, I'll get DH to bend it back. I don't think our contents insurance covers breakage and stuff, have to look into that when it's up for renewal. Slow...down? What does that mean??? I have 3 small children - any time I actually get to do something without 'help' I have to go very fast, or we wouldn't eat, YK?

Questions? Technical Issues? The Survival Guide / I've dinged me rim!

My TMX has been leaking when I've had large volumes of liquid at high speeds  ??? Not disastrous, just a bit messy and annoying. Checked the seal over and over. Noticed, finally, that the rim of the bowl is slightly dented  :-[ I'm clumsy, I drop the poor thing regularly. Obviously on just the wrong spot a while ago  :-))

Any advice? Hubby normally volunteers to fix such things but hasn't at this stage  8)

Thanks for the tips :) Presentation will work normally, but the current situation is far beyond normal fussiness that resolves if they're really hungry or they just want something a little different, she's got serious gut issues and is even rejecting her favourite foods at times  :o getting the probiotics into her though, hopefully will be on the mend soon :)

Thanks everyone, I did them in gladwrap in the basket, they were cooked (firm) in about 9 mins. She still didn't eat them, but hey, they worked and one day when she's not being so fussy about her food...the other one ate some once they were rejected by no 1, an achievement given how little she's been eating lately and how sick she was last night :)

And no washing up! I HATE scrubbing egg rings ;)

Can someone less sleep deprived than me think of a way to poach eggs in the TMX? I'm not a big egg fan, so I don't cook them much, the kids won't eat them if I fry or scramble them, want to see if I can poach them satisfactorily, figure the TMX would be more consistent than learning to do them on the stove, if it can be done ;)

Maybe in a little pyrex dish in the Varoma?

Tips and Tricks / Re: Thermomix Butter - photos
« on: June 08, 2009, 03:41:06 pm »
Went looking for tips:

http://www.marksdailyapple.com/diy-butter-yogurt-kefir-tempeh/

Place butter in a large jar and shake to remove any excess water.

http://ecobites.com/diy-recycling-projects/787-diy-butter-churn

To remove the remaining buttermilk from the butter, use a butter paddle or a
spatular to work the butter back and fourth on the sides of the bowl.

http://www.thekitchn.com/thekitchn/diy-recipe/recipe-diy-butter-019990

When the water runs completely clear squeeze the butter inside a clean paper towel or cheesecloth until dry

karen - Sorry I didn't see this sooner - my food wholesaler is in my local town...very long way from Canberra ;)

I made butter today, and am wondering if anyone has tips on how to get the water out of the butter easily after you've washed it? I'm sort of massaging it with a spatula in a bowl (after making a mess doing it in the basket, didn't think of the holes  :-))) but there's got to be an easier way?
